During the 1700’s, it was discovered that citrus fruits could prevent the occurrence of scurvy in sailors. Wondering why that was, a brilliant researcher/physician names Albert Zhent-Georgi investigated the contents of these fruits. In 1937, he discovered vitamin C. This vitamin C that he discovered included an outer shell of ascorbic acid that protected factors like ascorbinogen, bioflavonoids, tyrosine, rutin and Factors J, K and P against free radical damage.

While his research proved clearly that whole food vitamin C could cure scurvy, the ascorbic acid he isolated from these fruits never could. Nonetheless, ascorbic acid came to be known as vitamin C, even though it was but a small part of the whole molecular complex Zhent-Georgi discovered.
